Israeli Cuisine: Synthesis

Lesson 150 · סִכּוּם הַמִּטְבָּח

Closing Block 15 with synthesis. Israeli cuisine is the only national cuisine in the world that\'s younger than the country itself. It\'s still being invented. The "Israeli plate", hummus + salad + pita + olive oil, is barely 75 years old. The synthesis: 12 traditions colliding on one small geography, mediated by Mizrahi peasant food, French technique, and a vegetable obsession.

Cultural note, When Israelis travel abroad and miss home, they don\'t miss schnitzel. They miss the salad, the one their grandmother chops every morning, with cucumber, tomato, parsley, lemon, olive oil. That salad is the one true universal Israeli food. Every Mizrahi, Ashkenazi, Arab, Druze, and Russian-Israeli kitchen makes a version. That\'s the synthesis.
