Fine Dining & The Modern Israeli Chef

Lesson 149 · גַּסְטְרוֹנוֹמְיָה יִשְׂרְאֵלִית

Israel\'s fine-dining scene has exploded since 2010. Eyal Shani (Miznon, Port Said), Yotam Ottolenghi (London-based, Israeli-trained), Erez Komarovsky (bread guru), Uri Buri (Akko fish), Meir Adoni (Catit). The "modern Israeli" cuisine, Mizrahi peasant food + French technique + olive-oil-and-vegetable focus, defines Tel Aviv\'s top tables. White-tablecloth Hebrew is its own register.

Cultural note, Eyal Shani is the most-influential Israeli chef of the 21st century. His "wholeness" obsession (whole vegetables on the plate), poetic dish naming ("the love"), and theater-of-vegetables style reshaped how Israelis eat. Miznon expanded to Paris and NYC. Port Said\'s mixed-grill is the Tel Aviv power-lunch. Reservations at top spots: 2-3 weeks ahead.
